What is jerk? Jerk is Jamaica’s famous way of seasoning and cooking meat: a marinade built on allspice (pimento) and Scotch bonnet peppers, cooked slow over heat and smoke. It’s smoky and spicy, with a warmth that builds.

What are Jamaican festivals? Festivals are a Jamaican side dish: a cornmeal-and-flour dough, lightly sweetened, shaped into fingers and fried until golden. Crisp outside, soft inside, and they cool the heat of the jerk.
